I will simply begin with the caveat that cavemen did not eat brownies. Particularly if one has an autoimmune disease, eating brownies can cause inflammation.
With that said, I have experimented with some recipes for holiday sweets and found a great grain free brownie that can be modified to suit dietary restrictions. This is adapted from the fantastic paleo blogger Elana’s Pantry. Warning: these are good, be sure to have company when baking!
1 cup coconut sugar/or maple syrup
1 tablespoon maple flavor
4 ounces baking chocolate
1/4 cup coconut oil
1/2 C cocoa powder
Melt baking chocolate in double broiler. Mix melted coconut oil and sugar or maple syrup well. In a separate bowl beat 4 eggs and add maple flavor. Whisk until frothy. Add egg mixture to sugar mixture and beat well. Add 1/2 cup cocoa powder and mix well. Finally, add melted baking chocolate to the sugar mixture and pour into greased 8 x 8 baking dish.
