Winter warming soup and paleo cocoa #gluten free #paleo #celiac

We were dumped on this weekend with a winter storm.  It was beautiful fluffy snow, and we were blessed with time to play in it as a family. We had fun in the snow and then took time to warm up inside with delicious soup & cocoa!


I made a large batch of roasted butternut squash soup and saved it in jars for easy lunches.


In this soup:
Roasted butternut squash
6 C. vegetable stock
Seasoned with salt, pepper, and cinnamon.

The hint of cinnamon is the key to this tasty soup, in my humble opinion.

And in honor of National cocoa day, my version of cocoa:

•1 heaping T cocoa (Hershey’s is gluten free)
•2T maple syrup
•6oz. Hot filtered water
•cinnamon to taste (optional)
