Holiday help: Gluten free chocolate applesauce cookies

Good morning!
This morning I am baking for my toddler. We were out with the playgroup this morning and at snack he devoured a gluten free pumpkin-almond meal muffin.  Now I am back to attempting gluten-free baked goods at home for his sake!
Here are some photos from today’s baking.

Melted butter with baking chocolate…


1 cup applesauce
1/4 teaspoon baking soda
2 eggs
3 squares baking chocolate 1/2 stick butter
2 cups chickpea flour
1/4 cup coconut
1/2 teaspoon salt
1/2 cup maple syrup
1 teaspoon vanilla

Combine dry ingredients and mix well. Melt chocolate and butter.  Add to wet ingredients. Mix wet and dry ingredients. Pour on greased baking sheet in 1/4 cup mounds.
Bake at 350°F for 12 minutes. makes approximately 20.

*From the speed at which my toddler gobbled a cookie up, I am going to say that these turned out pretty well! It’s always fun to see baking projects rise and look like the conventional baked good… And always a relief to know that I don’t have to eat it (someone else will!)
