Here is an easy-peasy lunch/breakfast soup that warms the soul. Keep on hand for quick meals or in freezer for unexpected illness.
•onion, peeled and chopped
•parsnip, peeled and chopped
•carrot, peeled and chopped
• celery, chopped
• leek, chopped
•turnip, peeled and chopped
•baked chicken, cut into small pieces
• 6 C water
•salt, to taste
First, add onions and lard to saucepan and cook until translucent. Add celery and leek, stirring often. After about five minutes add rest of vegetables and water. Bring to boil. Add chicken and simmer. Salt to taste and serve when ready!
