Banana pancakes and other simple starters


Hello Hello!

We had a busy weekend here in the Hudson Valley.  We enjoyed beautiful summer weather and the outdoors!  I’ve been chasing a toddler, squeezing in my workouts, and cooking everything from scratch.  But — meals are seemingly coming together so easily these days.  I am loving low-FODMAP fruits: melons & berries.

Here are some simple starters with fresh goodness!

Banana Pancakes

My new favorite recipe is Paleo, grain-free, dairy & gluten free…

and only a handful of ingredients!


Banana Pancakes – Makes 1 pancake


  • 2 eggs
  • 1 mashed banana
  • 1T almond meal
  • 1t vanilla extract
  • sprinkle of cinnamon
  • raspberries

Whisk eggs and then mix in remaining ingredients until smooth.   Spray olive oil onto 8″ skillet with medium flame/heat.  Pour batter and let cook for about 10 minutes.


Flip and cook other side 1 minute.  Serve with berries.
