Today started off with a four course breakfast!!006

I had Fage 0% plain yogurt with blueberries while I got my egg/bacon/cheese and coffee ready!

Today was a quieter day as I got ready for a busy week and weekend ahead.  We have my son’s first birthday party this weekend and my husband’s 40th next week!!  So we’ll be preparing for these over the coming days and also staying busy with our regular routine and some fun outings.

This morning I made my shopping lists for  gluten-free, sugar-free cakes & cupcakes, and other party foods for Sunday.  I’m trying to find recipes that will be keepers, and that will not cause upset with autoimmune issues.  We have family members that are vegetarian so I have three binders of plastic covered recipes (that way I can take them out and wipe them off when I use them).

  1. gluten free vegetarian
  2. gluten free meat, poultry, and fish
  3. gluten free sweets

While I was amidst my recipes and cookbooks, I ended up “cleansing” my recipe binders of anything that wasn’t gluten-free and autoimmune friendly. Wow!  I thought it would be hard to do, but it just took some time and I actually feel better now that I’ve gone through them all and tossed what I can’t use.  I plan on donating the cookbooks that I will no longer use, as well.

These are some of my favorites!

Do you have some favorite gluten free cookbooks?  If so, what are they? How do you organize your recipes?
