Stir-Fry Friday

So after all of my weeding on Wednesday night, we had a full day of torrential rain yesterday …

After the rain, it was sunny again…


and then it rained some more 🙂

Definitely have some weeding on the schedule for this weekend.

So, although we had to drive super carefully today (since the rivers had flooded some roads) we did get out (YAY!).  Originally we were supposed to be visiting a friend an hour South of us, but not knowing the extent of flooding we played it safe and stuck close to home.

I got in a drill swim this morning after a great breakfast with black quinoa, tomatoes and eggs. IMG_20130615_090601_270

After swimming I snacked on some pistachios on the way to do other errands, which took longer than I’d anticipated.  My lunch-on-the-go was a cashew & ginger Kind bar.  Have you ever had one of these?  They are super delicious and fit the bill if you don’t prepare enough GF food to get you through an outing.

Anyway, tonight’s dinner was Vegetable beef stir-fry:



I used:

  • Eden Rice Vinegar
  • Tamari GF soy sauce
  • garlic
  • fresh ginger
  • fresh broccoli
  • carrots
  • kale
  • onions
  • beef strips
  • Lundberg wild rice
