The rain has been falling steadily all day. It seemed a like a great day to cozy up with a good book and a cup of coffee. Alas, today proved to be a much more active day. Good thing, too, considering my breakfast…
I had an amazing 1500 yard swim at the pool on my morning schedule. Love the endorphins from a workout!I’m a few weeks out from my 1.2 mile open water race. I’m feeling so much more comfortable with the distance…but will be anxious to get out into the ocean the week before the race so I can get used to swimming without lanes and with sea life.
We also needed to load up on almond products at the store. Taking the majority of lactose out of my diet has helped the recovery process go much more smoothly and nuts come in handy for energy that is dairy and soy-free. Our shopping list included almond butter and almond milk.
I’m considering making my own almond milk and almond butter because of cost, frequency of use and extra ingredients that might cause inflammation. I have been getting Blue Diamond Almond Breeze unsweetened vanilla– my favorite so far! It isn’t made from gellan gum or xanthan gum but does contain carrageenan. More on this topic soon!
Dinner tonight was beef stew! I was in some sort of daze because after my oven timer had been going for about 2 hours I went to stir the stew and realized the oven had been off during what I thought was cook time!
I quickly brought the Dutch oven out and cooked it on the stove top and after a couple of hours more it came out perfectly!! What a relief!
