Hello, Hello!! Well, today has been a delicious day so far! We had hard-boiled eggs and fresh cantaloupe for breakfast. I had a ton of cleaning to do this morning and had just the right amount of energy to do it.
I’m finding snacks are a must with a gluten free diet — they are simply a part of good wellness. For a mid-morning snack I had a hand full of almonds. It is a pretty muggy day today so it was a cool bath for my little one and a cool shower this morning for me — love that refreshed feeling on a hot day!!
Lunch was a reheated lentil quinoa/rice blend and summer squash dish leftover from dinner on Thursday night. This one is very interesting with my little one – he loves the textures (clean up is not so bad …really!)
I had a bit of practicing/work to do this afternoon and needed some more energy…my midafternoon snack was a protein smoothie!! I love putting extra ice in my protein smoothies and eating with a spoon like I would ice cream.
In this smoothie:
- Vanilla almond milk
- Frozen blueberries
- Peanut butter
- Rice protein powder
- Cocoa powder
It was dee-licous!! I’m feeling great with steady energy since breakfast and I can thank all of this protein and gluten free goodness for that! More later!!
